The Butcher

Carlos "Charly" grew up in the Belmont Cragin neighborhood — the same area where Charly's Burgers now serves its community. Before opening the restaurant, Charly worked as a butcher, sharpening his knowledge of meat, flavor, and quality while quietly building a vision of the kind of burger spot he always wanted to create.

The Leap

On May 21, 2019, Charly and his wife, Ana, put everything on the line to bring that vision to life. What started as a passion project became a neighborhood concept rooted in hard work, family, and the belief that a great burger can speak for itself. Every detail came from experience, hustle, and a deep connection to the community that raised him.

Since opening, Charly's Burgers has earned notable recognition and multiple mentions among the top burgers in Chicago. But at its core, Charly's is still about the same thing it was from day one: serving honest, unforgettable burgers in the neighborhood Charly has always called home.
